Fridays have to be a curry day, my kids are obsessed with rice at the minute so made my yummy curry.
I love this recipe I reworked from a gordan Ramsay recipe just made it healthier. You can have some chicken or if you want to go veggie you can use #chickpeas or #lentils or just your fav veg and still yummy.
If putting meat in it’s better to marinate overnight.
Cut the chicken breasts into chunks
Add 2 cloves of garlic (peeled and diced)
2 cm of ginger peeled and diced
1/2 tsp of sea salt
1/2 tsp chilli 🌶 powder
1/2 tsp garam masala
1 1/2 tbsp lemon juice 🍋
75ml Greek natural yogurt
Mix together in a bowl, cover in a box and place in a container overnight. If making on the day just marinate then add to the saucepan and add the rest of the ingredients.
1 tsp Garam masala
1 tsp ground cumin
1 tbsp coconut oil
2 garlic cloves peeled and crushed
2 cm ginger peeled and grated
1 tsp ground turmeric
1 tsp chilli 🌶 powder
275ml tomato purée
1 tbsp lemon juice
100ml Greek natural yogurt or use coconut milk
If you don’t have fresh ginger or garlic you can use powder instead and if there are any allergies like diary you can replace the yogurt for coconut 🥥 milk.
This is a healthy spicy curry that is so yum it’s the recipe I always use so easy to make.
For a little extra protein if you’re just having veg which is what I had tonight I love adding #cashewnuts and if too hot a dollop of natural yogurt, love to add a bit of #mangochutney and some poppedoms. If you want a sweet curry add some #mangochutney or mango chunks or mango juice, great for kids.

Don’t overdo your portion pick a smaller bowl Try to cut out chips and naam breads
Replace cream with low fat natural yogurts
